    Chef Jim Shirley Receives Prestigious FRLA Torch Award 2022

    for Outstanding Innovation and Education Practices in Hospitality 

    Nationally recognized restaurateur and South Walton resident Chef Jim Shirley is the owner of the Great Southern Café, The Meltdown on 30A, The Bay, Farm & Fire, North Beach Social, and The Chicken Shack in South Walton, Florida. He is also the co-owner of Great Southern Restaurants, which owns The Fish House, The Atlas Oyster House, The Fish House Deck Bar, and more in Pensacola, Florida. Chef Jim uses Southern accents with great skill and spirit, traveling far afield to graze and glean, absorb culinary ideas, select fine wines, and look for pockets of sustainable farming practices. As a Pensacola native, Chef Jim uses his knowledge of local waters and family farming histories to promote “New Ruralism,” a movement to champion sustainable agriculture at the urban edge. Jim is chair of the state board of directors of the Florida Restaurant & Lodging Association and a past president of the association’s Northwest Florida Chapter, founder and president of the Society of Great Southern Chefs, and a member of the Southern Foodways Alliance.     Chef Jim received the 2022 Torch Award presented by the Florida Restaurant & Lodging Association (FRLA) and is bestowed each year at the organization’s Florida Restaurant & Lodging Show in Orlando. The award was presented during the FRLA fall board meeting on November 3 at the Caribe Royale Resort.

    “I am deeply humbled and honored to have been presented with the Torch Award at this year’s Florida Restaurant & Lodging Show,” Chef Jim shared after the event. “To join the ranks of previous recipients, including Thomas Keller, Geoffery Zakarian, Curtis Stone, Michelle Bernstein and more, is a great privilege. I am in good company and can’t thank the FRLA enough.”

    FRLA created the Torch Award to honor outstanding chefs and restaurateurs who embody “illumination, energy, joy, victory, enlightenment, hope, and education.” These traits may be embodied through exceptional knowledge and leadership, philanthropic and community efforts, extraordinary talent and creativity, innovation and inspiration.

    “I don’t know if you can apply all that to me,” Chef Jim laughed. “I’m just a man trying to do good with good grits, but I am honored to be a representative for a strong cause.”

    This award comes on the heels of Chef Jim’s Great Southern Café’s naming as a recipient of the 2022 Wine Spectator Grand Awards—the iconic Seaside, Florida, restaurant’s tenth year on the list honoring restaurants with extraordinary wine programs. Great Southern Café was also recently named the winner of the Best Mojito in the 2022 Best of the Emerald Coast awards by Emerald Coast Magazine, while Chef Jim Shirley’s North Beach Social won the title for Best Outdoor Bar.

    Harbordock’s Restaurant 28th Annual Thanksgiving Dinner

    In what has become a local Thanksgiving tradition like no other, Harbor Docks Restaurant will provide complimentary meals to locals & out-of-towners for the 28th consecutive year this November 24th Thanksgiving day. After providing curbside “to go” plates the past two years because of the Covid-19 virus, Harbor Docks is back to having their sit down dinners inside the restaurant serving hundreds of people a traditional Thanksgiving meal including turkey, ham, dessert, beverages and all the “fixins.” There is no set charge for the meal but donations are accepted benefitting Habitat For Humanity of Okaloosa County & Destin Harvest.     AJ’s Feeds the Community this Thanksgiving

    For the seventh year, AJ’s in Grayton Beach will host a free Thanksgiving Day meal from 11 a.m. till 4 p.m. Last year, AJ’s Grayton and AJ’s on the Bayou on the waterfront in Fort Walton Beach served close to 1,000 meals. “We open up our doors to everyone, to ensure that no one is alone or hungry for the holiday,” says Keith Waters, Director of Operations for AJ’s.

    Homemade Roasted Thanksgiving Day TurkeyAJ’s Thanksgiving feast will feature time-honored classics such as turkey, ham, stuffing, turkey gravy, mashed potatoes, sweet potato casserole, green bean casserole, cranberry relish, garden salad, dinner rolls, and assortment of pies.

    “We have expanded our outreach to include our sister store in Grayton Beach, this will be their third year,” adds Waters. “We are open to everyone, and invite the community to join our AJ’s family on this day, to give thanks. While there is absolutely no charge, donations will be accepted from those capable of making them.”

    Alan Laird, the Owner of AJ’s says, “We want to give back to those that may not have the means to celebrate Thanksgiving. We also want to provide a gathering place for those who don’t have anyone with which to share the holiday meal or for those who simply want to celebrate with their neighbors. This is our way to thank the community that provides for us and our families, each and every day.”

    Reservations are not accepted, and diners will be served on a first come basis. AJ’s Grayton Beach will open their doors from 12 till 5 p.m. to serve Thanksgiving dinner, then join us for family Karaoke starting at 6 p.m.

    All donations received from both Thanksgiving feast will benefit Kids on the Coast Foundation. Donations will be used to assist local high school youth this upcoming holiday season. Kids on the Coast is a 501(c)(3) nonprofit organization that supports various charities that provide assistance and give support to local children and youth.

    Cafe+30a+charity+ball+12Café Thirty-A, located at 3899 East County Hwy 30A, will host its annual Christmas Charity Ball benefiting Caring and Sharing of South Walton on Friday, December 2, 2022.

    From 6- 10 p.m., the restaurant will be transformed with festive holiday décor for the annual evening event. Attendees will be greeted upon arrival with complimentary valet sponsored by Corcoran Reverie along with a glass of champagne. Inside, they’ll enjoy passed heavy hors d’oeuvres, a dinner buffet, and a cash bar sponsored by Foundation Title and Escrow Series, LLC. There will be music by DJ Wub Control sponsored by Centennial Bank, along with a commemorative Epic Photo Co. photo booth sponsored by McNeese Title Company.     The event will boast a large silent auction featuring items from various local businesses, as well as a generous raffle package from Hotel Effie, with all proceeds benefiting Caring and Sharing of South Walton’s efforts to provide food and financial assistance to local area families and individuals in need.     This Italian Wedding Soup is packed with immune boosting and good for you foods, like lemon, dill, spinach, bone broth, and much needed lean protein.

    Wedding soup is not so named because it is served at Italian weddings, but because the flavors of stock and bitter greens ‘marry’ well to produce a harmony of flavors: a Minestra Maritata.

    Ingredients

    4 cups chicken broth

    4 cups bone broth

    3 tablespoons good olive oil

    2 tablespoons butter

    1 pound lean ground turkey

    ½ cup gluten free panko bread crumbs

    ⅓ packed cup fresh parsley leaves, finely chopped

    1 egg, lightly beaten

    3 to 4 garlic cloves, minced

    1 small onion, chopped

    1/2 small onion, minced

    1 teaspoon kosher salt

    ½ teaspoon black pepper

    ½ cup freshly grated Parmesan cheese, plus more for serving

    ¾ cup gluten free orzo, ditalini, acini di pepe or other small soup pasta

    3 packed cups baby spinach, chiffonade aka thinly sliced

    1 lemon, zested and juiced

    ¼ cup fresh dill, roughly chopped

    In a large heavy bottom pot, melt 1 tablespoon of butter and add 2 tablespoons of olive oil. Saute 1/2 chopped small onion until it sweats and is translucent. Add 2 quarts (8 cups) chicken and bone broth to the pot and bring to a simmering boil.

    In a large bowl, add the turkey, panko, parsley, egg, garlic, salt, pepper and 1/2 cup Parmesan to a large bowl as well as 1/2 small onion, minced finely. Mix with a fork or your clean hands until combined. Gently roll the mixture into 15-20 small (1 1/2-inch) meatballs and transfer to a lightly greased baking sheet.

    Heat the broiler to high, cooking the meatballs until brown, turning halfway through, about 5 minutes per side. Watch carefully so they don’t burn.

    Add the pasta to the boiling broth and cook until al dente, then lower the heat to a low simmer.

    Add the meatballs to the broth and simmer on low until completely warmed through, 3 to 5 minutes, stirring occasionally. Remove from the heat, and add the spinach, dill, lemon and zest, stirring well. Season with salt and pepper to taste.

    When serving the soup, drizzle each with olive oil, and sprinkle with Parmesan. And, serve with crusty toasted sourdough bread.

    Pro tip: The meatballs can be made ahead of time and used for sandwiches, soups, and pasta dishes.

    Keep things casual with a gluten-free pizza at Pizza By the Sea which is conveniently located in WaterColor and Gulf Place. Elevate your dining experience at Surfing Deer in Seagrove with a varied selection of gluten-free dishes like lobster tacos, sweet & spicy snapper and braised beef short ribs.     This year, Roux 30a is welcoming fall with decadent dining affairs and the return of beloved Sunday cooking classes. Whether you want to sit back and let Chef Nikhil Abuvala and his team delight you with a vibrant multi-course menu, or you’d like to sharpen your culinary skills with Chef John, there is something for everyone this season at Roux 30a.

    First Sundays Cooking Series with Chef John

    Roux’s First Sundays Cooking Series will kick off in October and continue through February with special themes each month. To begin, Chef John will be teaching students how to perfect Coastal Italian cuisine, complete with preparing an entire fish, pasta + a paired sauce, and finishing with creamy pannacotta.

    In November, join Roux 30a and master Classic French-cuisine, like cassoulet, duck confit and creme brulee. If you’re interested in learning how to utilize fresh, local produce, attend December’s First Sunday Cooking Class where Chef John will center the meal around winter vegetables. Perfect the art of brunch in January, and learn how to make chicken paella & tres leches during February’s Spanish-themed class.

    Time to roll out the barrel and discover unique suds and ales. The Village of Baytowne Wharf at Sandestin presents the 14th Annual Baytowne Wharf Beer Fest Oct. 7-8. American specialty beers from throughout the nation will be available for participants to sample and savor. The main event on Saturday, Oct. 8, will feature more than 200 domestic and international craft beers available for sampling.

    Brewery representatives will be available at the event, offering an opportunity to learn about the different types of lagers and ales from a variety of styles, and live music will be featured during the festival.
